Norwegian Lefser

Ingredients

  • 1 kg Potatoes, boiled and mashed
  • 100 g Butter
  • 2 dl Heavy cream
  • 5 dl All-purpose flour
  • 1 tsp Salt

Instructions

  1. Boil and mash the potatoes until smooth. Let them cool completely.
  2. Mix the mashed potatoes with butter while still slightly warm.
  3. Add heavy cream and mix well.
  4. Gradually add flour and salt, kneading until you have a smooth dough. Be careful not to add too much flour as it can make the lefser tough.
  5. Divide the dough into about 20 pieces and shape into balls.
  6. Roll each ball out very thinly on a floured surface.
  7. Cook on a lefse griddle or large frying pan on medium-high heat until light brown spots appear.
  8. Stack the finished lefser with butter and sugar between each layer.
  9. Cover with a cloth and let cool completely before serving.
